Roasted Garlic Potato & Black Bean Tacos

Ingredients

  • Russet potatoes

  • 4 cloves garlic

  • 2 cups dried black beans

  • salt

  • pepper

  • taco seasoning

  • tortillas

  • Toppings of your choice - lettuce, tomato, sour cream, cheese, avocado, lime

Directions

  1. Cook black beans according to your favorite method.

  2. Dice potatoes into 1/2 inch cubes and top with oil, salt, pepper, and grated garlic. Sitr to combine and roast until cooked all the way through and brown and crispy. (I like the air fyer!)

  3. In a pan on the stove, mix the cooked black beans and 1/2 cup taco seasoning and 2 cups of water. Heat to a simmer and cook until most of the liquid is absorbed.

  4. Make your tacos with a base of potatoes and beans and add your favorite taco toppings.

  5. Enjoy!
