Cauliflower Cheese Soup
/Ingredients
2 heads cauliflower, chopped
2 onions, chopped
8-10 cups chicken broth
salt
pepper
3 cups shredded cheese
Instant potatoes
Directions
Put cauliflower, onions, and broth in a soup pot and simmer until everything is soft.
Mash everything with a potato masher OR an immersion blender.
Add all the cheese and 1/4 cup instant potatoes.
Add 1/2 tsp fresh pepper and taste for salt.
Serve with crusty bread!
Add shredded cheese on top while serving.
