Crock-Pot Southwestern Mac and Cheese
/Ingredients
8 oz elbow macaroni
14 oz diced tomatoes with green peppers and onions
10 oz diced tomatoes with mild green chiles
1 1/2 cup salsa
3 cups shredded, Mexican cheese blend
Directions
Coat the inside of the crock pot with non-stick cooking spray. Place macaroni, tomatoes, salsa, and 2 cups cheese in crock pot. Cover, cook on low 3 3/4 hours.
When cooked, sprinkle remaining 1 cup cheese over macaroni. Cover, cook on low 15 minutes or until cheese is melted.
