Red Beans and Rice

Ingredients

  • 1 ham hock

  • 1 pound soaked kidney beans

  • 2 diced onions

  • 4-5 diced stalks of celery

  • 3 bay leaves

  • 10-12 cups of water

  • 4-5 cubes of chicken bullion

  • 1 tsp Tony’s

Directions

  1. Put all ingredients in a large soup pot and bring to a boil. Reduce to a simmer. Cover and simmer for 3-4 hours.

  2. Serve with hot sauce and over rice!

Rice Pudding

Ingredients

  • 3.5 cups cooked rice

  • 3.5 cups milk

  • 2/3 cups sugar

  • 3/4 tsp salt

  • 2 eggs

  • 2 TBSP butter

  • 1 tsp vanilla

  • dried fruit

Directions

  1. Simmer first 4 ingredients until thick, about 15-20 minutes.

  2. Add eggs and simmer another 2-3 minutes

  3. Add remaining ingredients and EAT.
