Freezer Breakfast Biscuit Cups

Ingredients

  • 1 lb pork sausage (like Jimmy Dean)

  • 3 tbsp flour

  • 1 tsp pepper

  • 2 - 1/4 cup milk

  • 1 - 1/2 cup cubed hash brown potatoes

  • 3 tbsp butter

  • 6 eggs

  • 3 can large refrigerated biscuits - 24 biscuits

  • 1 - 1/2 cup shredded Colby Monterey Jack cheese

Directions

  1. In a large skillet, cook sausage over medium heat until no longer pink. Stir in the flour, and pepper. Gradually add the milk and bring to a boil. Cook and stir for 4 minutes or until thickened. Remove from the heat and set aside.

  2. In a separate skillet, cook the potatoes and butter until soft. Whisk the eggs and the remaining milk and pepper. Add to skillet and cook until almost set.

  3. Press into each biscuit onto the bottom and up the sides of ungreased muffin cups. Spoon the egg mixture, half the cheese, and sausage into cups. sprinkle with remaining cheese.

  4. Bake at 375 degrees for 18-22 minutes or until golden brown. Let cool for 5 minutes before removing from pan. If you are using jumbo muffin tins, this will be closer to 28 minutes.

How to Freeze- Freeze cooled biscuit cups in a freezer container, separating layers with waxed paper. To use, microwave one frozen biscuit cup on high for 50-60 seconds or until heated through.

Sausage & Meatballs Un-foiled Dinner

Ingredients

  • 1 package frozen broccoli

  • 2 peeled, cubed potatoes

  • 3 sliced carrots

  • 1 chopped onion

  • 1 lb sliced kielbasa

  • Frozen meatballs

  • 1 can beef broth

  • lemon-pepper seasoning

Directions

  1. Put all ingredients except broccoli into a 9x13 baking dish, sprinkle with lemon pepper seasoning.

  2. Bake, covered, at 350 degrees for 1.5 hours and then add broccoli. Bake uncovered another 20 minutes.

Chicken & Sausage Cassoulet

Ingredients

  • 3/4 lbs dried navy beans

  • 3 cups water

  • 1 bay leaf

  • 1 tsp salt

  • 1 can chicken broth

  • 1/4 lb cooked, diced bacon

  • 4 chicken legs or thighs

  • 2 quartered carrots

  • 2 quartered onions

  • 1/4 cup chopped celery

  • 1 cup canned diced tomatoes

  • 2 crushed garlic cloves

  • 1/2 tsp ground sage

  • 1/2 lbs chopped smoked sausage

Directions

  1. Cook dried navy beans in your favorite way. I like the instant pot! Use chicken broth for more flavor.

  2. Sear the chicken on all sides in a hot pan. Season your chicken with salt and pepper first!

  3. In a large casserole dish, combine the beans with cooking liquid, bacon, carrots, onions, celery, tomatoes, garlic, and sage. Top with the chicken.

  4. Cover and bake at 350 degrees for 1 hour. Uncover and add sausage. Bake more 30-35 minutes or until beans are tender. Discard bay leaf.

Slow Cooker Italian Sausage Sandwiches

Ingredients

  • 10 Italian sausage links

  • 1 jar spaghetti sauce

  • 2 bell peppers, sliced

  • 1/2 cup water

  • 1/4 cup grated parmesan or Romano cheese

  • 2 TBSP Italian seasoning

  • 2 loaves of french bread

Directions

  1. Brown sausage in a skillet and place in the slow cooker.

  2. Add the rest of the ingredients and cook on low for 4 hours.

  3. Slice the french bread and put sausage with sauce on the bread.

  4. Top with extra cheese and enjoy!

Slow Cooker Kielbasa Sandwiches

Ingredients

  • 2-3 pounds smoked sausage, cut into sandwich bun length.

  • 1 bottle chili sauce

  • 20 oz. crushed pineapple

  • 3 TBSP brown sugar

  • 12 sandwich rolls

Directions

  1. Place in ingredients except roll into the slow cooker.

  2. Cover and cook on low for 3 hours.

  3. Serve the sausage and sauce on the buns.

  4. Serve with your favorite side!

Pasta with Sausage and Broccoli

Ingredients

  • 1 pound ground spicy sausage

  • 1 pound pasta shape of your choice

  • 1/3 cup parmesan cheese

  • 1 pound broccoli

  • 1 cup chicken broth/white wine

  • salt

  • 1 tsp. oregano

Directions

  1. Boil a large pot of water, add salt, and cook pasta until tender. Reserve 2 cups of pasta cooking water.

  2. Roast the broccoli with salt and pepper in the oven (or air fryer) for 12 minutes at 400 degrees.

  3. In a skillet, brown the sausage until cooked through.

  4. Add the chicken broth and oregano, simmer for a few minutes.

  5. Add the broccoli, pasta, and cheese.

  6. Stir to combine and add pasta water if it seems dry.

  7. Taste for salt and serve with your favorite rolls!
